Caturra, Pache and the other mutations

Natural mutations that give a shorter bush and an easier harvest.

Caturra is a natural dwarf mutation of Bourbon, found in Brazil. The lower bush is easier to pick by hand and can be planted more densely, so the yield per hectare is higher.

In the cup: bright, clean acidity and a medium body. With good processing it is genuinely exciting, but it is less forgiving than Bourbon.

Pache: a Typica mutation from Guatemala, with the same logic behind it. A softer, smoother cup.

Why you see them mixed: many Central American lots — our Guatemalan Waykan among them — are several varieties picked and processed together. The aim is not to showcase one variety but the character of the region.
