Caoba – Guatemala Specialty coffee
pecialty grade, 100% Arabica coffee from Guatemala, from the famous Huehuetenango region’s „Waykan” selection. Classic and clean flavours in each cup – the dark roast is excellent for espresso. Available in in 250g or 500g.
Waykan is part of the “Regional Select” program: targeting microlots – local offerings, chosen for their pristine example of the dynamic character of coffees from Huehuetenango. Coffee accounts either directly or indirectly for roughly 80 percent of the local economy.
The cup: a balance of toffee and sweet nuts, like almond, while keeping the regions crisp acidity reminiscent of lemon, grape, or apple.
Roast: dark
Process: washed
coffee is picked ripe and depulped the same or the following day, then allowed to ferment for anywhere between 12–48 hours, depending on the climate. The coffee is then washed clean of its mucilage and spread on patios or raised beds to dry.
Variety & Origin: mix of Bourbon, Caturra, Pache, Maragogype and Catimor; 1400–2200 MASL elevation, Huehuetenango region, Guatemala.
Recommended preparation methods:
- espresso: boldness with a praline finish – sensible in milk-based drinks as well
Program and traceability
built as blends from coffees that cup out between 84–87 on our 100-point cupping scale, and come with regional and often microregional traceability, but are not farm- or producer-specific.
The packaging is fully recyclable (level 4) as plastic waste.
