One sack, three profiles. What the roast changes is the balance of acidity, sweetness and body — the fruit doesn't disappear, it just steps back.

This coffee is grown by ASOMUJER, founded in 2007 by ten women in Timaná, Huila, looking for a better return on their own work. Today it is seventy-five women producers — among them single mothers and women displaced by conflict — and the association supports them from growing through to selling. The decaffeination uses ethyl acetate derived from sugarcane, while the coffee is still green. Malt, a mild vanilla, dried citrus: decaf, but not a compromise.

The producer

ASOMUJER — Asociación de Campesinas del Sur del Huila

An association of seventy-five women producers in Timaná, since 2007.

I went looking for this one because of my friends. A lot of them love coffee and cannot drink it — some have just become mothers, some simply do not get on with caffeine. I did not want decaf to mean they get a worse cup. It is decaffeinated with a sugar-cane process, which is one of the cleanest ways to do it environmentally — I read up on that before I chose — and it is grown by the ASOMUJER women's cooperative in Timaná. Caramel, malt, dried citrus. Not "decaf coffee". Coffee.
